In Colombia we don't have special dishes to celebrate Easter Sunday. When I lived in Colombia, we would usually go to church to attend Easter Sunday Mass and then head home to rest.
We were also in the habit of not eating meat on Fridays during lent, so we would eat fish and seafood dishes. I remember my grandmother making this codfish omelet during this time of year.
This recipe is ideal for breakfast with and arepa or for lunch with a green salad.
