Cod is one of my favorite fish. Cooking fish can seem intimidating, but there’s a simple way to cook just about any fish by wrapping it called papillote. The result is delicious. This is why I want to share this delicious cod recipe with San Marzano tomatoes, olives, olive oil and peas. Enjoy!

Ingredients

  • 4 fillets of cod
  • 1 tablespoon olive oil
  • 1 lemon (juice)
  • 1 tablespoon seasoning powder
  • 1 teaspoon ground oregano
  • 1 cup San Marzano tomatoes, thinly sliced
  • 1/2 cup finely chopped red onion
  • 2 tablespoons sliced green olives
  • 1 tablespoon capers
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon ground black pepper
  • 3 cups frozen peas
  • 2 cups boiling water
  • 1 cube of butter
  • Salt to taste

Directions

    Line a large rectangular baking dish with aluminum foil. Cover the dish well because it will be the first phase in making the envelope where the fish will cook. Add the four portions of cod and season wit olive oil, lemon juice, the seasoning and ground oregano.

    Add the tomato slices, red onion, olive oils, capers and fresh thyme. Sprinkle on a bit of black pepper.

    Take a second sheet of aluminum foil and cover the fish in a way that it makes a package and seal it.

    Bake the fish at 375°F for 20 minutes.

    To prepare the peas, place them in a colander and run hot water over them to defrost them. Add the thawed peas to a bowl and season with butter and salt to taste.
  • 6
    To serve, add a fillet of cod to a dish and serve with buttered peas.
