Kick off the weekend with this delicious bread perfect for brunch or on the go. Blondies made with coconut flour are the ultimate weekend treat.

Ingredients

  • 1/4 cup coconut flour
  • 1/4 teaspoon salt
  • 3 eggs
  • 4 tablespoons melted butter
  • 1 teaspoon vanilla
  • 4 tablespoon agave or honey
  • 1/4 cup chocolate chips or walnuts, optional

Directions

    Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment or foil.

    In a bowl, mix the coconut flour and salt.

    In a separate bowl, whisk together eggs, butter, vanilla and agave or honey. Add the dry ingredients to the wet and mix through until the batter has no lumps.

    Stir in the chocolate chips or walnuts. Spread the batter evenly in pan.

    Bake for 20 minutes or until golden brown.

    Place on a cooling rack and cool completely in pan.

    Serve.
