I enjoy transforming my weekend leftovers into weekday lunches. Take my grilled chicken and rice family dinner as an example: I gave this dish a wholesome makeover by turning into a salad with fresh spinach, citrus fruits and a light yogurt dressing. Long live leftovers! MORE + LESS -

Ingredients

cup Yoplait® plain yogurt
Juice from 1/2 lemon

tablespoons olive oil
Salt and pepper, to taste

cups fresh spinach
2
cups cooked wild rice
2
cups grilled chicken, sliced
1
whole grapefruit, segmented
2
mandarin oranges, segmented

    In a small bowl, whisk together the yogurt, fresh lemon juice and olive oil; season to taste with salt and pepper. Set aside.

    Divide the spinach on two plates. In each plate, top the spinach with half of the wild rice, sliced grilled chicken, grapefruits and mandarin segments.

    Add the yogurt dressing and serve.

Expert Tips

  • You can replace the grilled chicken with shrimp, pork or salmon.
