My daughter loves Cinnamon Toast Crunch™ and I definitely understand why: they’re delicious! The day I saw this recipe I knew I had to try them! The result is delicious! They’re soft and moist. Next time I’ll make a version without eggs to see how they turn out. Enjoy!

Ingredients

  • 2 cups Gold Medal™ all-purpose flour
  • 1/4 cup Cinnamon Toast Crunch™ cereal, finely ground
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 1/3 cups sugar
  • 4 egg whites
  • 1 1/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 tub (12 oz) Betty Crocker™ Whipped Butter Cream Frosting
  • 1/2 cup Cinnamon Toast Crunch™ cereal (optional)

Directions

    Preheat the oven to 350°F. Place liners in 12 cupcake molds.

    Sift the flour, ground cereal, baking soda, salt and cinnamon in a bowl. Set aside.

    Mix the milk and egg whites in another bowl. Set aside.
  • 4
    Whip the butter for 3-5 minutes using a hand mixer until it’s pale. Add the sugar and vanilla and keep whipping for 3 more minutes.

    Add half of the milk mixture and whip until well combined. Add a third of the flour mixture and keep whipping. Alternate milk and flour until they’re both done.

    Distribute the mixture in the cupcake molds, filling about 2/3 each.

    Bake for 15-20 minutes or until a toothpick comes out clean when inserted.

    Remove from the oven and let cool completely on a rack.

    Once cool, cover with frosting. Decorate with more Cinnamon Toast Crunch™ cereal, if you like.

Expert Tips

  • tip 1
    Use a blender to break down the cereal. Process until you have fine powder. Strain the mixture to remove the bigger pieces.
