Ingredients

  • 6 oz bittersweet chocolate, chopped
  • 3/4 cup butter
  • 4 eggs, separated
  • 1/8 teaspoon salt
  • 3/4 cup sugar
  • 3/4 cup ground almonds
  • 1/2 teaspoon almond extract
  • Fresh berries, if desired

Directions

    Heat oven to 375 F. Grease and flour springform pan, 8x2 1/2 inches. In medium saucepan, melt chocolate and butter; cool 5 minutes.

    In large bowl, beat egg whites and salt with electric mixer on high speed until stiff. In medium bowl, beat egg yolks and sugar on medium speed until lemon colored. Gradually stir egg yolks into chocolate mixture; stir in ground almonds and almond extract. Gently fold chocolate mixture into beaten egg whites; spoon into prepared pan.

    Bake 35 to 40 minutes or until top is dry and knife inserted at edge of pan comes out clean. Cool completely; remove from pan. Garnish with mixed berries, if desired.
