Homemade pastries are always a must in my house on the weekend, the aroma alone welcomes relaxation and happiness. One of my favorites is the apple pie, except my version is made with cheese and is light and refreshing. A perfect pastry for hot summer days. MORE + LESS -

Ingredients

graham crackers, ground

tablespoons sugar

teaspoon cinnamon
1/3
cup melted butter
3-4 green apples, peeled and diced

tablespoons of sugar

teaspoon of cinnamon

tablespoons of water
2
packages (8 ozs each) cream cheese
1/2
cup of sugar
2
eggs
1
teaspoon vanilla extract

    Preheat the oven to 375°F.

    Combine the ground crackers with the cinnamon, sugar and melted butter. Pour into a pie mold that is 9 1/2 -10 inches in diameter. Apply pressure to the bottom and sides.

    Bake for 8-10 minutes.

    Lower the oven temperature to 350°F.
  • 5
    Place the diced apples in a medium pot with sugar and cinnamon. Stir and add water. Cook for 10 minutes, stirring occasionally. Let cool.

    Use a hand mixer to mix the cream cheese with the sugar until it’s creamy and light, 5 minutes. Add the eggs one by one and mix softly. Add the vanilla and mix for another 2 minutes.

    Mix with the cold apple and fill the pie. Even out the surface.

    Bake for 30-40 minutes until its browned and curdled.

    Let cool completely and refrigerate before cutting and serving.

Expert Tips

  • You can make the apples a day in advance, or you can use pre-made apple pie filling in a can.
