Ice cream and warm weather days go hand in hand. Whether it's in cups or as a tasty ice cream sandwich, it's always refreshing and welcome, and provides the perfect opportunity to create desserts filled with flavor.
What do you need to make a truly world-class ice cream sandwich? Simply a good cookie base and a delicious ice cream, nothing more! To avoid eating too many calories and enjoy a relatively guilt-free indulgence, I like making my ice cream with frozen bananas. Sometimes I'll simply add a tablespoon of vanilla. Other times, I'll add peanut butter or chocolate cream as in this recipe.
As you can see, it's a fat-free ice cream without a drop of added sugar. The banana is sweet enough and does not need any additives; the texture is amazing, creamy and soft, but you have to eat it quickly because it melts very fast, though I probably don't need to mention that, as these sandwiches are so delicious they're sure to be devoured in the blink of an eye.
