14-oz package Pillsbury™ Ready to Bake!™ refrigerated sugar cookies

tablespoons sugar

teaspoon ground cinnamon
Coconut-chocolate swirl ice cream, quantity to taste

    Pre-Heat oven to 350°F.

    In small bowl, mix sugar and cinnamon; set aside.

    Bake cookies following package instructions. While still warm, roll over sugar-cinnamon mixture and allow to cool completely.

    Spoon ice cream over one cookie and top with another to create an ice cream sandwich. Place in freezer until ready to serve.
