How cute are these mini tortillas made with blue corn!? My kids loved them when I made them for dinner. We served them with shredded chicken plus plenty of sliced avocado. Look for ground blue corn in the baking aisle of the grocery store.

  • 1 cup corn flour for tortillas
  • 1 cup ground blue corn flour
  • 1/4 tablespoon of salt
  • 1 cup water

    In a bowl, combine corn flour, ground blue corn flour salt and water.

    Knead to form a smooth dough.

    Divide dough into 20 mini portions and roll into smooth balls.

    Place one at a time onto a tortillas press lined with plastic film or plastic bag, press firmly.

    Cook on a preheated comal or grill for two minutes on each side. Serve warm.

    Freeze leftover tortillas wrapped in plastic wrap to use later.
