Beer Bread with Raisins

When the days start to cool down, two things tend to happen in our homes: we make soup and bake bread. The truth is, there’s nothing quite like the smell of freshly baked bread. My family is from a small town in Mexico that’s famous for its excellent bread and I remember walking its streets as a child enjoying the aroma that flooded out from every bakery. And every time we bake bread at home, all those beautiful memories return. Baking bread is one my husband’s favorite activities as well, so I accepted his suggestion to bake it with beer. In this case we used a porter beer because its flavor is fuller than a lager, but not as strong as a stout. Porter gives is a rich taste that combines well with the sweetness of raisins. Serve as a side to a tasty soup or eat it fresh out of the oven with butter. Either way, it’s delicious!

Ingredients

  • 3 cups of flour
  • 1 teaspoon of baking powder
  • 3 teaspoons of sugar
  • 1 teaspoon of salt
  • 1 bottle (12 ozs) porter beer, room temperature
  • 1/4 cup golden raisins
  • 1/8 cup melted butter

Directions

    Preheat the oven to 375 °F (190 °C).

    In a deep glass container, combine the four, baking soda, sugar and salt. Empty the beer out in one shot and add the raisins. Stirring the mixture as little as possible, combine all the ingredients. The mixture will look lumpy and loose, but this is normal.

    Take a bread-baking mold (9x5x3) and grease and flour the surface area. Empty the mixture into the mold and, with the help of a cooking brush, spread butter over the surface of the bread.

    Bake for 40-50 minutes or until you can stick a toothpick in it and have it come out clean. Remove from the mold and let cool over a kitchen grate.

    If you’re using a glass mold, lower the temperature 25 degrees.

    You can use cranberries or chocolate instead of the golden raisins.
