Ingredients

  • 1lb. spaghetti or similar pasta
  • 2 ripe avocados (large)
  • 1 cup fresh cilantro
  • 1/2 jalapeño pepper, or more to taste
  • 2 tablespoons oil
  • 1 garlic clove
  • 2 tablespoons lemon juice
  • Salt, as desired
  • 1/2 cup Mexican queso fresco

Directions

    Cook the pasta according to the package instructions, then drain and let cool.

    Separately, combine the remaining ingredients (except for the cheese) and blend together in a food processor or blender until you obtain a smooth cream. Taste and adjust the seasoning as necessary.

    Place the pasta in a dish and pour the sauce on top; stir well and serve with crumbled queso fresco on top.
