1lb. spaghetti or similar pasta

ripe avocados (large)

cup fresh cilantro

jalapeño pepper, or more to taste

tablespoons oil

garlic clove

tablespoons lemon juice
Salt, as desired

cup Mexican queso fresco

    Cook the pasta according to the package instructions, then drain and let cool.

    Separately, combine the remaining ingredients (except for the cheese) and blend together in a food processor or blender until you obtain a smooth cream. Taste and adjust the seasoning as necessary.

    Place the pasta in a dish and pour the sauce on top; stir well and serve with crumbled queso fresco on top.

  • If you would like to avoid the cheese, try garnishing with chopped walnuts instead.
