Avocados always make me remember my father’s uncle, Tío Aquiles. The first time I ever tried them was in his house in San Juan, Puerto Rico. One of the most wonderful things about him was his sense of humor and I still remember a joke he told about them. It was right after President Nixon was impeached. One day, as we were sitting at the table eating dinner, he asked ¨How do you say Watergate in Spanish? ‘Agua-gate’!¨ Whether you get the joke or not, there is one undeniable fact. Avocados are delicious, and I remember the ones I ate as a child in Puerto Rico with a special fondness. They were sweet and soft and ripe. It’s hard to find them like that in the United States. Being a very versatile fruit, avocados make wonderful desserts. Here is a simple favorite that is sure to impress your guests, with the added benefit that your kids are going to love it!

Ingredients

  • 8 oz vanilla yogurt
  • 1 large ripe avocado
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 2 strawberries
  • 1/2 cup whipped cream

Directions

    Peel avocado and remove pit. Cut avocado into pieces and place into blender. Add yogurt and blend well until it achieves a consistent color of green.

    Spoon avocado and yogurt mixture into two pretty glasses, making sure to keep the sides of the glass clean as you assemble. Place the two glasses in the refrigerator and allow mixture to chill 5 minutes.

    Once yogurt and avocado mixture is chilled and settled, place blueberries on; then raspberries on top of the blueberries. Top with whipped cream, and a strawberry on top. Then step back and admire your beautiful work before you eat it.

Expert Tips

  • tip 1
    This is such a simple dessert it seems like cheating. For a really beautiful effect, make sure the sides of the glass are clean. Appearances go a long way to making something look as delicious as it is going to taste.

    You can use pretty much any fruit you like for this dessert. If you plan to use heavier fruit, add at the bottom of the glass, under yogurt and avocado, so it doesn’t sink into the mixture. Chilling the yogurt before adding fruit on top allows mixture to harden a bit so the lighter fruit doesn’t sink in.

    Use any flavor of yogurt you like, but vanilla is nice because it does take over the flavor of avocado.

    You can really impress your guests by adding a cookie, colored sugar or cinnamon on top as well. If you would like to prepare more servings, you can either use smaller glasses or double the ingredients.
