Ingredients

  • 2 1/2 cups almond flour
  • 8 dates
  • 1 1/2 tablespoon dehydrated and unsweetened coconut
  • 1/4 cup organic coconut butter
  • 1/4 cup coconut sugar
  • 1 tablespoon linseed powder (flaxseed)
  • 3 tablespoons almond milk
  • 1 tablespoon pure coconut extract
  • 1/4 teaspoon Himalayan salt

Directions

    In bowl, combine all dry ingredients: almond flour, Himalayan salt, linseed powder and sugar.

    Add coconut butter, almond milk and pure coconut extract to mixture.

    Divide dough into 2 or 3 balls, cover and place in the freezer for 20 minutes.

    Cut dates into small pieces.

    Have a non-stick baking sheet ready.

    Preheat the oven to 350°F.

    Take dough out of freezer.

    The process of putting them together is similar to that of empanadas. Divide dough into 12 portions. Make a ball with the first portion, flatten and shape into a disk. Add dates and coconut to the center. Then press edges together to form a half-moon shape. Make sure dates and coconut are well covered. Repeat process with remaining portions.

    Place the half-moons on the baking sheet. Bake for 12 minutes.
