This is one of my favorite salmon recipes because it’s easy, fast and full of flavor. Instead of sugar, I use agave, which is so sweet that I only need to use a bit to get the right flavor. To balance this sweetness, I add lemon juice and some soy sauce, but you must be careful when cooking because agave syrup caramelizes – just like sugar – it leaves a golden and delicious brown crust on the salmon, but if the heat is too high, the salmon tends to get burned and bitter.

Ingredients

  • 2 salmon fillets with skin
  • Salt and pepper
  • 2 tablespoons agave
  • Juice of 1/2 lemon
  • 1 tablespoon soy sauce
  • 3 peeled garlic cloves
  • Fresh rosemary leaves
  • 1 tablespoon olive oil
  • Steamed broccoli
  • Cooked sweetcorn
  • Cherry tomatoes

Directions

    Clean the salmon fillets, put them in a bowl and season with salt and pepper.

    In a different bowl, mix the agave, lemon juice, and soy sauce. Pour over the salmon, add the garlic and rosemary and let marinade for about 45 minutes.

    In a pan, heat the oil over medium heat.
  • 4
    Drain the salmon and cook with the skin down first. Add garlic and rosemary leaves to the pan so they release their scent.

    Turn the salmon over and cook it for two or three more minutes or until the salmon is slightly golden brown.

    In the meantime, you can boil the marinade and serve it as sauce.

    Remove from the pan and serve with broccoli, corn, and tomato.
