I remember walking up and down the aisles of the supermarket as a child and always stopping to buy a few boxes of gelatin mix with my Mom. She would allow me to choose the color/flavor I wanted, and when we got home I would help mix the gelatin in the hot water until it dissolved. Then she would pour the whole mixture into a glass dish and place it in the fridge. When it was done, it just looked like a slab of whatever color we made in a square shape. She would take a spoon and scoop some out, and it would fall into my bowl shapeless and wobbly. As I got older and started to explore the city more, I noticed these beautiful readymade gelatin molds at the Mexican markets. I started with 4 colors, and the gelatin mold was perfect. Everyone enjoyed eating it. Older people were happy, little kids were asking for more, and I was just happy that it turned out right. Eventually, I would build gelatin molds of up to 9 or 10 colors, but it's always best to start out small, and once you know you can do it, go for the gusto.

Ingredients

  • 6 cups of boiling hot water
  • 3 boxes (6 oz) of gelatin (in the flavor of your choice)
  • 1 package (1 oz) unflavored gelatin
  • 1 can (14 oz) sweetened condensed milk
  • Non stick cooking spray

Directions

    Begin by boiling the water. Lay out four bowls.

    Empty the content of each package into one bowl each, and in the additional bowl add the packet of unflavored gelatin.

    Then pour 1 3/4 cups of the boiling water into the colored gelatin bowls, and 3/4 cup of the water into the unflavored gelatin bowl. Mix well until it is completely dissolved.

    Then add the sweetened condensed milk to the bowl of unflavored gelatin. Mix it until it is completely incorporated.

    Let all gelatin mixtures come to room temperature.

    Lightly spray a 12 cup capacity fluted pan with non-stick cooking spray, and then add the first color of gelatin.

    Place it in the refrigerator for 40 minutes.

    Remove the pan from the refrigerator, and pour the next color in and refrigerate it for half an hour. Now you have two colors chilling.

    Remove pan from the refrigerator again and add in the third color. Place it back in the fridge for 30 more minutes.

    Lastly, remove the pan from the refrigerator and pour in the 4th color, and refrigerate it overnight.

    When it is ready to remove from the fluted pan, pull along the edge of the gelatin with your fingers to separate it from the sides, and then let it sit at room temperature for 10 to 20 minutes. Finally, invert the pan on a dish.
