Mezcla el puré de camote con el jarabe de maple y 1/4 cucharadita de canela molida en un tazón mediano. Combina 1/4 cucharadita de canela molida restante con el azúcar granulada en un recipiente pequeño.

Separa los bísquets en 8 piezas. Extiende cada bísquet en un círculo de 6 pulgadas en una superficie ligeramente enharinada.

Rellena cada círculo con 3 a 4 cucharadas de puré de camote. Unta los bordes de las empanadas con mantequilla derretida. Dobla las empanadas a la mitad, sellando los bordes. Pica la superficie de cada empanada 2 ó 3 veces con un tenedor.

Acomoda las empanadas en una charola para hornear ligeramente engrasada. Unta la superficie de cada empanada con mantequilla derretida. Espolvorea un poco de la mezcla de azúcar y canela encima de las empanadas. Hornea por 12 a 15 minutos o hasta que estén ligeramente doradas.

Retira las empanadas del horno. Deja enfriar unos 5 minutos antes de servir. Acompaña con un vaso de leche o un cafecito. ¡Buen provecho!
