Swap Out: Make this recipe and use blueberries instead of apples or a mixture of blueberries and blackberries.

Directions

  • 1 Preheat oven to 350° F.
  • 2 Liberally spray an 8 x 8 inch baking dish with nonstick cooking spray.
  • 3 In bowl, toss together diced apples, diced rhubarb and vanilla extract. Add flour and sugar, stir to coat. Once all fruit is coated, spoon fruit mixture into prepared baking dish and wipe bowl clean.

  • 5 Evenly sprinkle topping over fruit.
  • 6 Bake for 35 to 40 minutes, fruit should be tender when pierced with a toothpick or knife.
  • 7 Remove from oven, allow to cool for 30 minutes and serve with ice cream.
