Gluten free all-purpose rice flour blend is the key to this hearty gluten-free apple crisp.

Ingredients

Topping

  • 1/2 cup gluten free all-purpose rice flour blend
  • 2 tablespoons packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted coconut oil, very cold, cut into small pieces
  • 1/2 cup pecans, chopped
  • 3/4 cup gluten-free old-fashioned oats

Filling

  • 2 1/2 lb apples (any favorite baking apple), peeled, cored, sliced thinly (5 to 6 apples), about 8 cups sliced
  • 1/3 cup packed brown sugar
  • 2 tablespoons gluten free all-purpose rice flour blend
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Directions

    Heat oven to 375°F. In food processor, place first 4 Topping ingredients. Cover; pulse several times to blend. Add coconut oil pieces; pulse until distinct crumbs form. Add to large bowl; stir in pecans and oats. Reserve.

    Spray 12-inch cast-iron skillet or 13x9-inch (3-quart) baking dish with cooking spray. In large bowl, mix Filling ingredients. Toss to combine. Arrange evenly in skillet. Sprinkle topping evenly over apples, pressing lightly.

    Bake 40 to 45 minutes or until topping is golden brown, apples are tender and juices are bubbling. (Cover with foil if top begins to brown too fast.) Serve warm.

Expert Tips

  • tip 1
    Granny Smith apples were a favorite for this crisp in the Test Kitchen. However, Braeburn, honey crisp or your favorite apple would also work well.
  • tip 2
    Apple pie spice is a combination of several dry spices, such as cinnamon, cloves, nutmeg and mace. Feel free to use in place of the cinnamon.

    This crisp can also be baked in a 10-inch cast-iron skillet; the pan will be full and may take an extra couple of minutes to bake. Bake with a foil-lined cookie sheet underneath to catch any juice that may bubble up over the side.
