Directions

  • 1 Place the rack in the middle of the oven and preheat to 375°F.
  • 2 Place the carrots side by side in a baking dish. Place the garlic in the middle of the carrots.
  • 3 Mix the broth, maple, olive oil, cumin, cayenne pepper and salt together in a bowl.
  • 4 Sprinkle this mixture over the carrots and cover with aluminum foil.
  • 5 Bake for at least 30 minutes or until tender. Remove the aluminum and continue baking until they start to brown, about 15 minutes. Add the cilantro and serve at room temperature.
