Ingredients

  • 6 medium-large dark orange sweet potatoes (3 lb)
  • 2 tablespoons margarine or butter, melted
  • 2 tablespoons real maple syrup or maple-flavored syrup
  • 1 teaspoon grated orange peel
  • Juice of 1 medium orange
  • 1/2 teaspoon salt
  • Fresh rosemary sprig, if desired

Directions

    Heat oven to 375°F. Line cookie sheet with foil. Place sweet potatoes on cookie sheet; prick several times with fork. Bake 1 hour or until very tender. Let stand 15 minutes.

    Cut potatoes in half lengthwise; scoop pulp into large bowl. Mash pulp well. Add butter, syrup, orange peel, orange juice and salt; mash well. Garnish with rosemary sprig.

    To reduce cook time, microwave sweet potatoes, two at a time, on microwavable paper towels on High 8 to 10 minutes or until tender; proceed to step 2.
