Macaroni and cheese is one my kids favorite meals. I like to prepare my own version at home while keeping nutrition in mind. I like to use whole grain pasta because it offers more nutritional value than regular pasta. Sometimes I add pieces of chicken or ham to give it a special touch. Enjoy!

Ingredients

  • 10 oz whole wheat pasta of your choice (I used penne)
  • 6 tablespoons butter
  • 3 tablespoons flour
  • 3 cups milk (not skim)
  • 1 cup half and half
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 cups cheddar cheese, grated
  • 1 cup grated Parmesan cheese

Directions

  • 1
Cook the pasta as per their instruction. Strain and set aside.
  • 2
Preheat the oven to 350°F. Grease an 8 inch baking dish with oil or cooking spray.
  • 3
Melt the butter in a large pot. Add the flour and stir until the mixture is lightly browned, 1-2 minutes. Add the milk and half and half and whip to remove the lumps. Season with salt and pepper.
  • 4
Add the cheese and stir until everything is well combined. Add the cooked pasta and mix well.
  • 5
Transfer the mixture to the greased mold, sprinkle on the parmesan cheese and bake for 40-45 minutes until it’s browned and bubbling.

  • If you want a cheesier taste, you can add 4 oz of cheese sauce when you add the cheddar.
