Whole Wheat Pasta Casserole with Cheese

Macaroni and cheese is one my kids favorite meals. I like to prepare my own version at home while keeping nutrition in mind. I like to use whole grain pasta because it offers more nutritional value than regular pasta. Sometimes I add pieces of chicken or ham to give it a special touch. Enjoy! MORE + LESS -

Ingredients

oz whole wheat pasta of your choice (I used penne)

tablespoons butter

tablespoons flour

cups milk (not skim)

cup half and half
1/2
teaspoon salt
1/4
teaspoon pepper

cups cheddar cheese, grated
1
cup grated Parmesan cheese

    Cook the pasta as per their instruction. Strain and set aside.

    Preheat the oven to 350°F. Grease an 8 inch baking dish with oil or cooking spray.

    Melt the butter in a large pot. Add the flour and stir until the mixture is lightly browned, 1-2 minutes. Add the milk and half and half and whip to remove the lumps. Season with salt and pepper.

    Add the cheese and stir until everything is well combined. Add the cooked pasta and mix well.

    Transfer the mixture to the greased mold, sprinkle on the parmesan cheese and bake for 40-45 minutes until it’s browned and bubbling.

Expert Tips

  • If you want a cheesier taste, you can add 4 oz of cheese sauce when you add the cheddar.
