White Bean Bruschetta with Sun-Dried Tomatoes, Goat Cheese and Basil

Sun-dried tomatoes can add another flavor profile to your favorite foods. They're a tasty complement to bold flavors such as goat cheese, but can also give frittatas, pizza and bread a unique spin. I love to add them to my white bean salad because the flavor and presentation all goes perfectly on a toasted slice of French bread. You can find canned, jarred or bagged sun-dried tomatoes at your local supermarket. They're convenient to cook with because they come ready to serve and no prep is needed.

Ingredients

  • 3/4 cup canned white beans, unsalted, drained and rinsed
  • 1/4 cup olive oil
  • 1 garlic clove, chopped
  • 1 bay leaf, crumbled
  • 1/3 cup oil-packed sun-dried tomatoes, drained and chopped
  • 1/2 lime, juiced
  • Salt and pepper to taste
  • 2 ozs goat cheese, crumbled
  • 8-10 fresh basil leaves
  • 1 small French baguette, sliced into 1/2-inch slices, toasted

Directions

    In a medium bowl, place beans, olive oil, garlic, crumbled bay leaf, sun dried tomatoes, lime juice, pepper and salt.

    Toss to combine.

    Refrigerate for 1 hour.

    To serve: Spread goat cheese on each toasted slice of bread, top with basil leaves and a 1/2 tablespoon of bean mixture.
