A vegetarian chile relleno like this one is one of the richest dishes, and can satisfy even the most voracious appetites. Even if you’re not too fond of vegetables, you’ll love the flavors in this dish. The idea behind this dish is that you can combine fresh vegetables and bring out their flavor with a delicious red sauce, which you can prepare at home with tomatoes, chilies, onion, oregano and other spices. When serving, cover each vegetarian chile relleno with some of this sauce and fresh cheese. Vegetarian dishes can be delicious too!

Ingredients

  • 2 poblano chili peppers
  • Oil
  • 1 zucchini, diced
  • 1 cup chopped mushroom
  • Salt and pepper to taste
  • Red sauce

Directions

    Clean the chilies and cover them in vegetable oil.
  • 2
    Put them over the fire until their skin turns black and then put them inside a plastic bag for at least 10 minutes.

    Sauté the chopped zucchini and mushrooms. Add salt and paper to taste, and if you want, you can add 1 chopped garlic clove or your favorite spices.

    Take the vegetables off the fire when they’re ready and put them aside.

    Take the chilies out of the bag, put them in cold water and remove the burned skin with your hands.

    Use a knife to open the chilies and remove the seeds, and stuff them with the zucchini and mushrooms.

    Serve with red sauce and fresh cheese if you like.
