Today I'm sharing a chicken Tuscan soup with chickpeas and vegetables you can serve as a simple and light meal option.

Ingredients

  • 1 teaspoon butter
  • 1/2 lb or 2 cups chicken tenderloins, cut into cubes
  • 4 cups fresh spinach and kale greens, ready to eat
  • 4 cups Progresso™ Tuscany Chicken Broth
  • 2 cups canned chickpeas
  • 2 cups filtered water
  • Salt and pepper, to taste

Directions

  • 1
    Add the butter to a soup pot and fry the cubed chicken. Incorporate the spinach and kale leaves. Mix.

    Incorporate the broth and canned beans. Stir and add the water.
  • 3
    Finally, season with salt and pepper, to taste.

    Serve this soup while hot, accompanied with a cup of brown or white rice for a complete meal.

    Incorporate other seasonal vegetables to make a vegetarian version of this soup, omitting the chicken.
