Thanksgiving is right around the corner and we’re all getting ready to share delicious dishes and share great memories with loved ones. Usually we're faced with a ton of leftovers and must put on our thinking caps to find creative ways to use leftover turkey. This simple turkey potpie recipe has become a post Thanksgiving tradition in my home and I really hope you enjoy it.

Ingredients

  • 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
  • Leftover turkey, to taste
  • 2 cups chicken broth
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2-3 sliced carrots
  • 1/2 cup finely chopped celery
  • Salt and pepper to taste
  • 4 tablespoons (1/2 stick) unsalted butter
  • 1/4 cup flour
  • 1/2 cup milk
  • 3/4 cup frozen peas

    Preheat the oven to 375°F.

    Add 1 tablespoon of oil to a pan and warm at medium heat. Add the onions, carrots, celery, salt and pepper. Cover and let the vegetables cook until tender, about 5 minutes. Stir occasionally.

    In the meantime, cut or shred the cooked turkey into small pieces.

    Once the vegetables are ready, transfer to a large bowl with the turkey.

    Heat the butter in a pan over medium heat. When the foam disappears, add the flour and cook the mixture for 1 minute. Add the chicken broth and milk, and stir until the sauce thickens (about 1 minutes). Add salt and pepper to taste. Add more milk if necessary.

    Remove the sauce from the heat and pour over the vegetables and turkey. Add the peas to the sauce.

    Place one of the piecrusts in the 9" mold. You can also cut the crusts to make individual pies. Poke holes in the dough a few times using a fork and bake for 5 minutes.

    Remove the dough from the oven and pour in the sauce and veggie mixture.

    Cover the pie with the other crust and seal the borders. Cut a few slits into the surface and let bake for 25 to 30 minutes or until the dough has browned.
