After the busy holiday season, sometimes all you want to do is stay home, enjoy your family and eat leftovers. However, eating the same leftovers can get old. I would like to share with you an alternative to make the most of that delicious leftover turkey. It’s a delicious combination that’s perfect for breakfast or even dinner. Pair it with a salad and fruit, and you’ve got yourself a complete meal.
Casseroles also give you the opportunity to add whatever vegetable you have on hand. This time I used hash brown potatoes that I had in my freezer, green onions and jalapeño pepper.
