Mother’s Day is just around the corner, and food planning is one the most important things on the to-do list for this big family event. Anyone who has ever gone out trying to get a table at a restaurant during this busy day has probably learned that the smartest and less stressful way to spend this special day is at home, eating homemade food. It’s also nice to cook for the mothers in your family, as they are usually the ones who do it on a regular basis. Mother’s Day brunch is their time to relax, be pampered, and enjoy trying what everyone else has made with so much love for them. This simple tomato tart is one of my favorite brunch ideas. It is easy enough to be prepared by grown-ups, teenagers, and supervised kids alike. Despite having few steps and ingredients, the result is delicious! Your mom will love it!

Ingredients

  • 1/2 cup sprouted whole wheat flour
  • 1/4 cup quinoa flour
  • Salt, to taste
  • 5 tablespoons cold butter, cubed
  • 2 tablespoons water
  • 1 cup grated cheddar cheese
  • 1 egg
  • Pepper, to taste
  • 1 1/2 - 2 cups cherry tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon olive oil

Directions

    Mix the flours and 1/2 teaspoon salt in a bowl.

    Add the cubed butter, and start kneading with your hands, until it resembles oatmeal.

    Add the water, and keep kneading until it’s smooth, elastic, and doesn’t stick to your hands anymore. If it’s too dry, you can add a little more water. Shape into a ball, put in a bowl, and cover with a dish. Refrigerate for 30 minutes.

    While the dough is in the fridge, grate the cheese and mix it in a bowl with the egg. Season with salt and pepper, to taste.

    In another bowl, combine the cherry tomatoes with salt, pepper, oregano, rosemary, and olive oil.

    Preheat the oven to 350 °F.

    Grease an 8 x 4 inch loaf pan with butter. Cover the base with the dough, stretching it by pressing with your fingers. Make sure you press it on the sides of the pan too, so it goes up about 1/2 inch. Pinch all over with a fork, making small indentations.

    Pour the egg and cheese mixture over the dough, spreading it evenly with a spoon or spatula.

    Cover the whole surface with one layer of tomatoes, placed side by side.

    Bake for 45 minutes. Let cool for 15 minutes before unmolding, with the help of 2 spatulas.

    You can use any regular flour you prefer to make the crust if you can’t find quinoa or sprouted whole wheat.
