If you have the craving to try a delicioso, whipped, creamy and devilish Italian dessert, then I invite you to follow the next steps for preparing my addictive Tiramisu- it’s straight out of the movies! I feel fortunate to have received this recipe first-hand from my friend Conchi; it’s a secret recipe that has passed from generation to generation in her Italian family. Thanks to her, I learned how to prepare a delicious Mascarpone “fatto in casa” or homemade crema fresca that is para chuparse los dedos. Prepare to take a wonderful journey while preparing and tasting this sublime dessert, which fuses the richness of coffee, chocolate, and a mixture of creamy ingredients to create an irresistible combination. Ingredients

cups of prepared black coffee

cups whipping cream (heavy cream)

tablespoons white granulated sugar

package (8 oz.) cream cheese

tablespoons sugar

egg yolks

egg whites

teaspoon salt (one pinch)

tablespoons coffee liquor

packages of ladyfinger cakes (approx. 300 grams)

tablespoons grated chocolate (of your choice) or 2 tablespoons cocoa powder

tablespoons coffee beans

    Prepare three cups of strong black coffee.

    In a deep mixing bowl, beat the cream with an electric beater for three minutes on medium speed. When the cream has begun to thicken, add four tablespoons of sugar and continue to beat for 30 seconds more. Set aside when finished.

    In another medium sized bowl, use the electric beater to mix the cream cheese, egg yolks and eight tablespoons of sugar. Beat until the mixture has a uniform, creamy consistency.

    In a separate mixing bowl, preferably stainless steel, add the egg whites and the pinch of salt. Beat with an electric or manual beater until soft peaks form. Set aside.

    In the bowl with the whipped cream, add the cream cheese mixture and the beaten egg whites. Using a spatula or wooden spoon, gently ‘fold’ the mixture together without stirring too much. Add the coffee liquor little by little as you go.

    In a 9x13x2 inches (22.5x33x5 cm) rectangular container, begin to put the tiramisu together.

    Start by briefly moistening each ladyfinger in the prepared coffee as you place it in the base of the rectangular container. Continue until you have a uniform first layer. Using a spatula, cover the ladyfingers evenly with half of the combined cream mixture. Sprinkle one spoon of grated chocolate or cocoa over the cream, and repeat the steps to make a second layer. Over this final layer, decorate as you like with the coffee beans.

    Cover and refrigerate before serving. If sealed with plastic wrap, this dessert will last for four days refrigerated.

Expert Tips

  • The coffee used to soak the ladyfingers should be at room temperature or cold; never use while still hot.
  • You can prepare tiramisu in small containers or individual parfait cups.
  • To grate the chocolate, you can use a cheese grater for smaller pieces, or for a more striking effect a potato peeler can be used to make decorative curls of chocolate.
