Three-Cheese Spaghetti

In one of my cooking classes (Sexy Chef), I taught my students how to make simple, flavorful dishes using only 5 ingredients. Say what you want, pasta just isn't pasta without cheese (unless it's a pasta recipe that incorporates seafood, which generally doesn’t call for cheese). This foolproof recipe brings together three different kinds of cheese (mascarpone, gorgonzola and Parmesan) for a balance of flavors that is simply out-of-this-world. I recommend you double this recipe because it's almost impossible to eat just one serving!

Ingredients

  • 1 pinch salt
  • 1 12-oz package tri-color spaghetti noodles (or the spaghetti of your preference)
  • 8 oz mascarpone cheese
  • 8 oz crumbled gorgonzola cheese
  • 1/2 bunch Italian parsley, chopped
  • 5 tablespoons grated Parmesan cheese

Directions

    In a medium-sized pot, bring water with a pinch of salt to a boil. Add the package of spaghetti noodles and cook according to package directions (most pastas require approximately 10 minutes, cooked al dente).

    While the pasta is cooking, in a separate, small pot, melt the mascarpone with the gorgonzola cheese over low heat.

    Chop the parsley or cut it with kitchen scissors. Set aside.
  • 4
    Once the pasta is fully cooked, drain and return the pasta to the pot. Immediately mix with the creamy, melted cheese mix.

    Plate and sprinkle grated Parmesan cheese and fresh parsley over the top of each serving.

    Enjoy while hot!

Expert Tips

  • tip 1
    If you can't find mascarpone, substitute with 8 oz of cream cheese, 1/4 cup sour cream and 1/8 cup whipping cream. Blend together until thick.
