Ingredients

  • 2 medium carrots, peeled and diced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning (garlic, basil, oregano based mix)
  • 1 15 oz can tomato puree
  • 3 cups low-sodium chicken stock
  • 2 cups dry macaroni pasta
  • 1/2 cup grated parmesan cheese
  • 1/2 cup shredded cheddar cheese

Directions

    Place the olive oil and diced carrots in a large saucepan over medium heat. Cook for about 5 minutes or until the carrots are soft.

    Add the tomato puree, Italian seasoning and chicken stock. Simmer, uncovered for about 15 minutes.

    Meanwhile, cook the pasta in boiling water according to packaging instructions. Drain and set aside.

    Add pasta to soup and mix to combine. Add cheeses and stir well to mix everything together, turn off heat.

    Ladle heated soup inside a pre-heated thermos container.
