Ingredients

Herb and Butter Mixture

  • 1 tablespoon chopped fresh or 1 teaspoon dried marjoram leaves
  • 1 tablespoon chopped fresh or 1 teaspoon dried thyme leaves
  • 4 cloves garlic, finely chopped
  • 1/4 cup butter, softened

Turkey

  • 1 whole bone-in skin-on turkey breast (4 1/2 to 5 lb), thawed if frozen, cut in half

Chile and Spice Rub

  • 4 teaspoons ancho chile powder
  • 2 teaspoons dried marjoram leaves
  • 2 teaspoons dried thyme leaves
  • 4 tablespoons olive oil

Directions

    In small bowl, mix herb and butter mixture ingredients. Loosen turkey breast skin as far back as possible without tearing skin. Spread herb and butter mixture on turkey breasts under skin.

    In another small bowl, mix chili and spice rub ingredients. Rub spice mixture over turkey breasts on top of skin. Place each turkey breast in 1-gallon resealable food-storage plastic bag; seal tightly. Place in refrigerator up to 8 hours to marinate.

    Heat oven to 325° F. Place turkey breast halves, skin side up, on rack in large shallow roasting pan. Insert ovenproof meat thermometer so tip is in thickest part of breast and does not touch bone. Bake uncovered 1 hour. Baste with pan drippings. Roast turkey an additional 20 to 30 minutes or until thermometer reads 165°F. Remove turkey from oven and let stand 15 minutes for easier carving. Serve with Pear-Chorizo Stuffing and Cranbery Sauce a la Chipotle.
