Sapote is a delicious fruit with an orange pulp and a shiny black seed. The fruit’s skins is brown and its texture resembles a fine piece of wood. It is without a doubt a beautiful fruit, both inside and out. When I was little, we enjoyed sapote on special occasions. Later on when I was a college student in Miami, my Cuban family offered me their famous sapote shake. It was so delicious that it became a tradition to drink this at least once a week. Today I want to share a recipe using sapote pulp and vanilla ice cream to enjoy in the morning or as a midday snack.

Ingredients

  • 3 cups sapote pulp (can be frozen or natural)
  • 4 cups of filtered water
  • 4 scoops of vanilla ice cream of your choice

Directions

    Place the sapote pulp and water in the blender and process for 5 minutes until all the ingredients are well combined.

    Serve in glasses and add a scoop of ice cream to each.

    Use frozen sapote if you can’t find fresh fruit.
