Ingredients

  • 2 large red onions, julienned
  • 2 jalapeño or ají peppers, julienned
  • 1 tablespoon cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper

Directions

    In a large bowl combine onions, chili pepper and cilantro.

    In a small bowl, whisk lime juice, vinegar, salt and pepper. Pour over onion mixture and toss to coat. Refrigerate until chilled.
