This is a delicious and easy salad. With just a few ingredients you’ll become the queen of the family. My secret weapon in this recipe is bacon, as it adds delicious flavor and incredible texture. This easily adapted salad will find its way to your dinner table time and time again.

Ingredients

  • 2 cups cooked rice
  • 6 slices of bacon
  • 1 package (11 oz.) market blend vegetables
  • Basil or chopped chives

Directions

    Preheat the oven to 400°F. Place the bacon on a backing sheet in the oven.

    Bake for 15-20 minutes. I like my bacon crispy so I let it cook for 20 minutes.

    Transfer the bacon to a plate lined with absorbent paper towel. Cut into pieces once cool.

    While the bacon is cooking, prepare the vegetables according to the instructions on the microwavable package.

    Mix together the cold rice, bag of vegetables and sauce, and almost all the bacon in a bowl. Stir well and add fresh chopped basil or chives.

    Taste and adjust the seasoning if necessary.

    Serve at room temperature and decorate with fresh herbs and the rest of the bacon.

    You can also use bacon that has been pre-cut and –cooked.

    Try other combinations of vegetables; it will give your salad a different taste.
