Ingredients

  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 vanilla bean
  • 1/4 cup sugar
  • Pinch of salt
  • 1 cup quinoa
  • 3/4 cup pomegranate arils
  • 1/2 cup pecans, roughly chopped

Directions

    Rinse quinoa in a strainer until water runs clear; about 1 minute.

    In a medium saucepan, combine milk, cream, 1/4 cup sugar, salt and vanilla bean. Add quinoa, reduce heat to medium-low and stir. Cook for 30 minutes stirring frequently.

    To serve, scoop quinoa into small bowls or glasses and top with pomegranate arils and chopped pecans.
