A creamy coconut quinoa pudding is the ultimate way to begin or end the day. This recipe made with coconut milk can be served warm for breakfast or chilled for a healthy after-dinner dessert. MORE + LESS -

Ingredients

cup quinoa

cups coconut milk
1/2
cup agave
1
teaspoon vanilla extract

teaspoon ground cinnamon

teaspoon salt

cup toasted coconut

    Rinse quinoa thoroughly under cold water, strain and place in a medium pot along with coconut milk, agave, vanilla extract, ground cinnamon and salt. Bring to a boil, stir, reduce heat, cover and simmer for 20 minutes.

    After 20 minutes, remove lid, stir and continue simmering for 10 more minutes, or until quinoa has absorbed most of the coconut milk.

    Remove from heat, serve warm garnished with toasted coconut or allow to cool, place in fridge and serve cold as a dessert.

  • Try this recipe with soy, chocolate or whole milk.
