Heat oven to 375°F.

In a saucepan, bring 2 cups of chicken broth to a boil. Once boiling, add quinoa, reduce heat and cover. Cook according to package directions, approximately 7-10 minutes, or until all the liquid as been adsorbed.

Meanwhile, coat a pan with olive oil and brown ground turkey with onions and tomatoes. Add garlic, making sure to stir often, not to burn it. Add seasonings. Once browned, add strained can of black beans and let flavors incorporate.

Once quinoa is ready, add it to the ground turkey mixture and cook for 2-3 minutes, allowing the grain to adsorb some of the flavors from the ground turkey.

Arrange prepared bell pepper halves in a baking dish and fill with just enough of the quinoa and ground turkey mixture to reach the top. Place baking dish in preheated oven for 20-25 minutes, or until pepper is tender.

Top with sour cream and cilantro. Serve warm.
