Pumpkin Pepita Cranberry Cookies

In the throes of November and December it is easy to get caught up in a huge preparation for Holiday dinners. We think of our main course, of all of the side dishes, and pour over the small details of how to decorate the table. My family is a big lover of pumpkin, but not necessarily of pumpkin pie. However, they do love cookies, and they enjoy eating them by the handful. This holiday season, I thought up these delicious little cookies that hold all the flavor of a pumpkin dessert in cookie form. These yummy Pumpkin Pepita Cranberry Cookies are ideal for a lite dessert after a heavy meal. They almost have a cake consistency, yet are not super sweet. There is just enough dulce there to curb your sweet craving, and they add the finale to a perfect meal.

Ingredients

  • 2 1/2 cups multipurpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup sugar
  • 1 cup dark brown sugar
  • 3/4 cup butter (room temperature), 1 1/2 sticks
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/4 cup canned pumpkin
  • 1 cup dried sweetened cranberries
  • 3/4 cup pepitas (pumpkin seeds, hulled)

Directions

    Preheat oven to 350°F.

    In a bowl combine flour, salt, baking soda, and pumpkin spice together. Whisk and set aside.

    In a large bowl or stand-up mixer stir in sugars (regular and brown) and butter. Mix until creamy (it might be grainy). Then add egg, vanilla, and pumpkin. Mix until well combined and fluffy.

    Add flour mixture to pumpkin sugar mixture. Mix until combined. Then add cranberries and pepitas. Mix it well, again.

    Drop rounded tablespoons of dough onto a lined cookie sheet 2 inches apart. Bake for 20 minutes or until cookies are slightly browned around the edge.

    Remove from cookie sheet and transfer to a cooling rack.
