One of the many culinary delicacies I discovered when I visited the U.S. for the first time is pesto. For me it was an explosion of flavors incomparable to anything I'd ever experienced. I quickly discovered that pesto is a combination of herbs, garlic and a type of nut. Not only is it quite versatile, but also it's very easy to prepare. Traditional pesto is made with basil, but it can also be made with parsley, cilantro or, like in this instance, pistachios. Pesto can be used in many various dishes. Add it to pasta with a little parmesan cheese, maybe as a sauce on your salmon or even on your pizza! Add a tablespoon of pesto to your vegetable soup or even on a plain piece of toast, the options are truly endless. How do you enjoy your pesto?

Ingredients

  • 3 oz of pistachios, toasted in salt
  • 1/3 cup of parmesan cheese
  • 1 garlic
  • 1/4 tablespoon of salt
  • 1/4 tablespoon of pepper
  • 2 cup of chopped cilantro, including stems
  • 3/4 cup of olive oil

Directions

    Put the pistachios, parmesan cheese, garlic, salt and pepper in a food processor until the pistachios are as pulverized as possible.

    Add half of the cilantro and oil until everything is well combined. Add the other half of the cilantro and mix until achieving an even consistency.

Expert Tips

  • tip 1
    A little bit of pesto can go a long way, so if you've got some left over, I recommend filling an ice tray with the remaining portion. Fill as many spaces as you need with the pesto, cover with plastic wrap and freeze for a few hours. Once firm, remove the cubes and transfer to a freezer bag. When you need pesto again, you only need to remove one or two cubes.
