Green pea soup with pork chops reminds me of my childhood, since my mom used to prepare this meal frequently. One thing's for sure: the pea soup is satisfying. Just one serving hits the spot! You can add other veggies, but with just 5 ingredients and a few minutes, you can offer your family a deliciosa meal. ¡Buen provecho!

Ingredients

  • 4 pork chops, cut in small pieces
  • 1/2 cup onion, finely chopped
  • 1 cup peas, washed
  • 1 1/2 cups carrots, peeled and cut in rounds
  • 4 cups vegetable broth
  • Salt and pepper, to taste
  • Cilantro leaves (optional)

Directions

    In a medium-sized pot over medium heat, lightly fry the pieces of pork until golden brown, for approximately 3-5 minutes. Add the onion and let cook until the onion is transparent.

    Add the peas, carrots and vegetable broth; mix well. Taste and season with more salt and pepper, if necessary.

    Reduce the heat to low, cover and let cook, stirring occasionally, for 15-20 minutes, or until the peas have softened. Remove from heat.

    Garnish with chopped cilantro, if you wish, and serve hot.

  • If you're using smoked pork chops, add the bones to the soup to give it more sabor. Remove the bones before serving.
