Papaya in Syrup

Living in the Caribbean opens the door to enjoying tropical fruit almost all year long, such as: pineapples, bananas, guanábanas, nísperos and lechosas (papayas.) This makes it easy to prepare desserts, sweets, smoothies, marmalades or just a simple fruit salad at any time. On this occasion, I'm going to share with you how to make one of my favorite desserts, dulce de lechosa-or papaya as this fruit is commonly known. This light dessert of simmered papayas is very popular in Puerto Rico, as well as throughout other Caribbean countries and sub-tropical areas.

Ingredients

  • 1 green papaya, approx. 2 lbs.
  • 2 dried cloves
  • 2 cinnamon sticks
  • 3 cups sugar

Directions

    Cut the lechosa or papaya in half, lengthwise and peel the halves using a potato peeler or serrated knife. Then remove the seeds inside with a spoon, lightly scraping the surface to remove any excess membranes.

    Next, cut the halves into thin slices or cubes and place in a pot with plenty of water. Cover the pot and bring to a boil. Cook for 30 minutes, stirring occasionally so that the pieces of fruit don't stick together.

    Afterwards, remove the lid and add the remaining ingredients. Continue to cook (uncovered) for 30 more minutes or until the liquid has reduced into a syrup. Remove from heat and let cool before transferring to a jar or other hermetic container. Completely chill in the refrigerator and serve over fresh queso blanco.
