Aguas frescas are a tradition in my family. They add color and freshness to our meals and they're a great way for children to eat fruits and vegetables. Normally the way we prepare aguas depends on seasonal fruits. Some of our favorites include pineapple, watermelon and cucumber, but we particularly like papaya agua fresca. This tropical fruit can be found almost year-round, but is particularly sweet and tender in the summer. The flavor of the papaya is a bit hard to explain, but it is sweet and refreshing and its consistency is like silk. Add a little lemon juice to give it the perfect balance. Try it!

Ingredients

  • 4 heaping cups of maradol papaya, diced
  • 6 cups water, divided
  • 1/2 cup sugar
  • 1 lemon, juice

Directions

    Empty the papaya, two cups of water and sugar into a blender and mix until the papaya is dissolved and you have a thick, silky mixture. Empty into a pitcher then add the other four cups of water, lemon juice and stir.

    Serve with ice or put it in the refrigerator for a few hours to cool.
