Ingredients

  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 2 teaspoons baking powder
  • 1/2 cup butter or lard
  • 2 eggs
  • 3/4 cup cold water
  • 2 (12 ozs each) orange jam jars
  • 1/4 cup milk

Directions

    To prepare the dough On a clean surface, place flour, salt, sugar and baking powder. In the center, add the butter or lard and with the help of two knives, divide it while you combine it with the dry ingredients. The mix will yield a lumpy consistency.

    Whisk in one of the eggs and, little by little, add water until well combined. Divide the dough in two equal parts, place them in a bowl and cover them with foil paper. Place in the refrigerator for 30 minutes.

    To make the empanadas Preheat the oven to 350°F.

    Remove the first dough ball from the fridge and divide into 12 little balls. In a flour-covered surface, stretch one of the balls with a rolling pin until you make 1/4-inch-thick circles. Add a tablespoon of orange jam in the center, fold the circle to enclose the filling and, with your hands, fold the edges to seal completely (you can also use a fork to do so.)

    Place in a greased baking sheet. Repeat the previous step with the remaining little balls of dough. Remove the other half of the dough from the fridge and repeat until you complete the 24 empanadas.

    Whisk in the other egg and add the milk. With a pastry brush, spread that mix over the empanadas for a nice touch.

    Bake for approximately 20-30 minutes, until golden brown.

    You can make the filling with other ingredients like strawberry, pineapple, grape or apricot jam, among others.
