Isn’t it great to walk into a house and feel the smell of freshly baked cookies coming out of the oven? When I ran my own cookie business from home a few years ago, I discovered that there were very few people who could resist this alluring smell. All my friends–including the most rigid dieters and those who claimed they didn’t have a sweet tooth–fell prey to the temptation of trying my fresh cookies whenever they visited, and one cookie was never enough. It was also during my time as a cookie baker that I discovered that homemade cookies can be an excellent Christmas gift. For starters, everyone loves cookies. And then there’s the fact that fruity and homey sweets are the ideal Christmas dessert. On top of this, when you make them yourself, you immediately give them an extra special quality: love. I encourage you to try it. Next time you visit a friend, or any time during the holiday season, have a batch of cookies ready at all times, to pack and bring along with you. I guarantee the love you put into them will come right back at you.

Ingredients

  • 6 tablespoons unsalted butter, at room temperature
  • 1/2 cup, plus 2 tablespoons brown sugar
  • 1 egg
  • 1 grated Honeycrisp apple, or any other sweet apple (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 cup quinoa (or regular) flour
  • 1 cup rolled oats (old fashioned)
  • 1/3 teaspoon baking powder
  • 1/3 teaspoon cinnamon powder
  • 1/3 teaspoon salt
  • 1/2 cup walnuts, chopped
  • 1/2 cup dried cherries

Directions

    Preheat the oven to 350 °F.
  • 2
    Beat the butter and sugar with a mixer, until creamy.
  • 3
    Add the egg and apple and beat until well mixed.
  • 4
    Add the dry ingredients, and beat well with a spatula or with the mixer at low speed.

    When you don’t see any more flour, add the walnuts and cherries and mix well with a spatula.

    Line a baking tray with parchment paper.

    Take 2 tablespoons cookie dough and put them on the tray. Press a little to give them the shape of a small cookie (not flat).

    Repeat with the rest of the dough, and bake for 15 minutes.

    Wait for 5 minutes before transferring to cooling racks.

Expert Tips

  • tip 1
    If you don’t have parchment paper, you can grease the tray with butter, and then cover it with a thin layer of flour. This way the cookies won’t stick to the tray.
  • tip 2
    You can use any kind of nut or dried fruits when making these cookies. You can also use fresh blueberries.
  • tip 3
    For a different taste, leave the apple out of the recipe and add 1-2 teaspoons orange zest.
