Nopales and Eggs

My grandfather has had a cactus growing in our backyard since I can remember. He would slice off a paddle and then carefully cut off all the spiky needles. I would sit and watch him slice up his nopales and then boil them. He would add a spoon to the pot, then go to me and say “they’re less slimy if you add a spoon to the boiling water.” Once he had his nopales nice and tender he would add them to eggs with a little bit of tomato and eat them with a corn tortilla. That’s exactly how I eat them today. The only difference is I buy my nopales already made. No need to hassle with needles or spoons!

Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup chopped tomato
  • 1/4 cup chopped prepared nopales
  • 3 eggs
  • Salt and pepper, to taste

Directions

    Heat olive oil in a frying pan over medium heat.

    Then add in tomato and nopales. Sauté in olive oil for 10 minutes.

    In a small bowl, whisk eggs together, then pour into the frying pan over the tomato and nopales.

    Cook for about 5 minutes or until eggs are to your desired consistency.

    Add a little salt and pepper to taste.
