Mini Biscuit-Waffles with Chocolate and Strawberry Sauce

This time of year we celebrate many birthdays at my house! I've made it a tradition to treat the birthday person to his or her favorite breakfast. We already know that breakfast is the most important meal of the day, so what better way to start a birthday than with delicious food. When my little ones are celebrating their birthdays, their favorite breakfast is mini biscuit-waffles. Since it is a special day, I spread chocolate on the waffles and cover them with strawberry sauce. My kids love them! I use Pillsbury™ Grands!™ biscuits quite a lot because they're super versatile and I can make a ton of yummy things with them. The best part is they don't contain any eggs and my youngest daughter - who is allergic to eggs - can enjoy them. Enjoy!

Ingredients

  • 2 cups fresh strawberries, washed and cut into medium pieces
  • 2/3 cups sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla essence
  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Buttermilk Biscuits (8 Count)
  • 1 cup chocolate for spreading
  • Powder sugar, for decorating (optional)

Directions

    In a small pot, at medium low heat, combine the strawberries, sugar, lemon juice and vanilla. Mix well. Lower the heat once it comes to a boil and let cook until it has a thick consistency, about 10 minutes. Remove from heat and let cool.

    Heat regular or Belgian waffle maker according to the manufacturer's directions.

    Open can of biscuits and separate the dough. Cut each biscuit into two equal pieces and shape into balls.

    Lightly grease waffle maker. Depending on size of waffle maker, place 2 or 4 biscuit balls at a time on hot waffle maker. Bake about 2 minutes or until Golden Brown. Remove from waffle maker. Repeat the same process with the rest of the dough.

    Spread chocolate on mini waffles. Dust with powder sugar (optional). Cover with strawberry sauce and serve immediately.
