These sandwiches make a great light lunch. This time I added sweet piquante peppers. I discovered these peppers a little while ago and they’ve become my favorites. They have a sweet yet spicy flavor. You can find several different types like mild, medium and spicy. I use the mild version since I’m not good with overly spicy foods. If you want to make it or prepare it for your kid’s lunch, you can add the yogurt sauce on the side to add just before eating so it stays crunchy. Enjoy!

Ingredients

  • 4 rolls of bread of your choice
  • 1/2 cup Greek Yogurt Tzatziki Sauce
  • 1 cup fresh and tender spinach leaves
  • 1/4 red onion, cut into thin strips
  • 6-8 canned sweet peppers (sweet piquante peppers), cut into thin strips
  • 1 1/2 cup feta cheese, crumbled

Directions

    Cut the bread in half.

    Add a layer of yogurt sauce to the bottom half of the bread. Then add the spinach, onions, sweet peppers and feta cheese. Cover with the top half of the bread.

    Serve immediately.
