Mango Guacamole

Guacamole is one of my family’s favorite dips. They love eating it with tortilla chips or cut veggies. When I go to the grocery store and find avocados at a good price, I usually make guacamole at least three times a week. Several years ago, I tried a guacamole recipe by chef Rick Bayless and I loved it. What he does is add a ripe mango to the traditional guacamole, and this gives it a delicious sweet and tart taste. So when I come across ripe mangoes at the grocery store these days, I take the opportunity and add them to my guacamole. Mango guacamole is a great way to make your kids eat more fruits and vegetables. I hope you like the recipe!

Ingredients

  • 1 large, ripe mango, peeled and diced
  • 3 ripe avocados
  • 1/4 cup onion
  • 1/2 or 1 serrano chili, seeded and finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon of lemon juice
  • Salt, if desired
  • Several cilantro leaves for garnish

Directions

    Cut avocados in half and remove pits. With spoon, scoop out the avocado flesh and place in bowl.

    Mash with fork; add three quarters of the diced mango, the onion, the serrano chili, the cilantro and the lemon juice. Season with salt.

    Place mango guacamole in serving bowl and garnish with the remaining mango and cilantro leaves. Serve with chips (tortilla) or totopos.

    Before cutting avocados make sure they are ripe.

    If preferred, use a red onion instead of a white or yellow one to give it a more intense taste.

    Serve guacamole with vegetables, such as chunks of cucumber, red bell peppers, celery or carrots.
